How to prepare Noni juice
The Noni fruit is said to have good medicinal functions and very popular amongst Asians and Polynesians. The most popular form on Noni is juice but it is also available in powdered and pill formats.
There are many varieties of Noni juice, a very popular example is soy sauce. The dark, thick fermented version can be made with Noni fruit. It is also available in unfermented sweet form.
How is the juice extracted?
The Noni fruit, also known as Morinda Citrifolia, is consumed throughout the world. The fruit is easy to work with and extract from in the ripened form. The unripe fruit does not extract well, unlike the ripened fruit. The ripe Noni fruit is very sweet and juicy. One gallon of juice requires a minimum of twenty pounds of Noni fruit in ripened form. The fruit and pulp are fermented in containers that are specifically designed for this purpose. The hard press extraction method is used to extract the juice. The fermentation process continues for two months for the separation of the pulp and the juice, similar to milk and whey creation.
Another form of Noni juice is available that is sweeter, unfermented and fresh squeezed. A fruit press is required to squeeze the juice out of the pulp of the Noni fruit. The yield of the noni fruit is very high and the sweetened juice is very enjoyable and refreshing.
The traditional method is to pile the fruit into a vat and allow the weight of the fruit to drip the juice out of the Noni. The process takes longer than using the press, just like with commercial manufacturers, the process may take two months. The juice is filtered to clean unwanted substances.
Though the market is not familiar with Noni juice and its benefits, manufacturers are now manufacturing and selling Noni juice on the market. The entire fruit is used to make the Noni fruit beverage. The Noni fruit is picked from the Noni tree, the cut pieces are wash and stored in tanks that have been sterilized to prevent germs and bacteria. It is then left in the tanks to ferment. This a process that takes at least two months. The juice is removed from the tanks upon completion of the fermentation process. It is filtered and pasteurized by heating the liquid.
How to make Noni juice at home
Find and pick a very ripe Noni fruit. Ripened fruit can also be purchased at fruit and vegetable stores, though they may not be easy to find. The second step is to wash the fruit without bruising the skin while cleaning it. Transfer the fruit into an air tight sealed container to begin the aging and fermentation process. Leave the container outdoors for at least 6-8 weeks to ferment and separate the pulp and juice. The final step is to strain the juice to remove the remnants of the Noni fruit.
The Noni juice can be stored in the refrigerators to remain in the usable state for several weeks.
